Sodium alginate, also called algin or alginate, is one kind of natural polysaccharide carbohydrate extracted from seaweed. Its molecular weight is 216 and molecular formula is C5H7O4COONa.
It can be widely used as thickener, emulsifier, stabilizer, binding and sizing agent in food, pharmaceutical, textile, papermaking, daily chemicals and many other industries and fields. Since 1980s, sodium alginate has got new expansion in food application.
